Apricot Walnut Bread

A great option for breakfast or lunch.

Ingredients:

  • ½ cup boiling water
  • ½ cup dried apricots
  • ½ cup butter, softened
  • ½ cup sugar
  • 2 eggs
  • 2 ½ cup all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ½ teaspoon ground cloves or ginger
  • 1 cup milk
  • ½ cup walnuts, chopped

Directions:

  1. Preheat the oven to 350°F (180°C).
  2. Pour the boiling water over the apricots and let them soak while you make the batter.
  3. Cream together the butter, sugar and eggs.
  4. Add the flour, baking powder, salt and cloves and mix until smooth. Set aside.
  5. Drain apricots and chop coarsely.
  6. Add apricots, milk and walnuts to batter. Mix everything together. Transfer the mixture into a greased and floured 9”x5” (23x13cm) loaf pan. (Batter will be fairly stiff).
  7. Bake for 45 to 55 minutes.

Total Time / Yield:

  • About 1 hour and 15 minutes / 10-12 servings

Notes, Tips & Tricks:

  • This bread is really good when served while still hot from the oven, sliced and with some butter or your favorite jam spread on it.
