Chickpeas salad
This salad, besides being very nutritious, is also very refreshing and tasty.
Ingredients:
- 1 large can of chickpeas
- 2 tomatoes, chopped
- 4 slices onion, chopped
- 4 tablespoons (full) of chopped green onion (scallion) or parsley
- 4 tablespoons lemon juice
- 4 tablespoons of white vinegar
- 4 tablespoons olive oil
- 4 tablespoons mayonnaise
- Salt and pepper to taste
- 250 to 300g of one or more types of lettuce leaves and other types of leaves, mixed, washed and sliced roughly cut into pieces
Directions:
- In a large bowl add the chickpeas, tomatoes, onion, green onion (scallion), parsley, lemon juice, vinegar, olive oil and mayonnaise. Mix all together.
- Add salt and pepper to taste and mix a bit more.
- In a large plate, line the bottom with the various types of leaves and spread the chickpeas mixture over them.
- Refrigerate until ready to serve.
