Chickpeas Salad

This salad, besides being very nutritious, is also very refreshing and tasty.

Ingredients:

  • 1 large can of chickpeas
  • 2 tomatoes, chopped
  • 4 slices onion, chopped
  • 4 tablespoons (full) of chopped green onion (scallion) or parsley
  • 4 tablespoons lemon juice
  • 4 tablespoons of white vinegar
  • 4 tablespoons olive oil
  • 4 tablespoons mayonnaise
  • Salt and pepper to taste
  • 250 to 300g of one or more types of lettuce leaves and other types of leaves, mixed, washed and sliced roughly cut into pieces 

Directions:

  1. In a large bowl add the chickpeas, tomatoes, onion, green onion (scallion), parsley, lemon juice, vinegar, olive oil and mayonnaise. Mix all together.
  2. Add salt and pepper to taste and mix a bit more.
  3. In a large plate, line the bottom with the various types of leaves and spread the chickpeas mixture over them.
  4. Refrigerate until ready to serve.

Total Time / Yield:

  • 30 minutes / 4 servings
