A cake that is also a dessert, very tasty and goes well on many occasions.

Ingredients:

  • 4 eggs (yolks and whites separated)
  • 4 tablespoons of sugar
  • 3 tablespoons all-purpose flour
  • 1 teaspoon baking powder
  • 1 pinch of salt
  • Parchment paper for lining baking sheet
  • ½ cup of your favorite fruit jam (use more if needed)

Directions:

  1. Preheat oven to 350° F (about 180°C).
  2. Using an electric beater, beat well the egg whites until stiff.
  3. Then, place the egg yolks and beat well.
  4. Add sugar, baking powder, salt, flour and continue beating well.
  5. Add batter in a baking sheet (about 33 x 23cm) with parchment paper.
  6. Place in the oven and bake for 10 to 15 minutes.
  7. When it is ready and still hot, hold the edges of parchment paper to transfer everything from the baking sheet toward a flat surface. Trim the edges a bit to avoid breakage when rolling.
  8. For the filling, place the jam on a plate and mash it with a fork. Transfer to a saucepan and add a tablespoon of water and cook on low to moderate heat until melting.
  9. Spread the filling over the baked batter and, with the help of the parchment paper, roll slowly and carefully each section released from the parchment paper. Once it’s done, you can garnish with icing sugar over the top.

Total Time / Yield:

  • About 30-40 minutes / 10-12 servings

Notes, Tips & Tricks:

  • The filling can be substituted by Dulce de Leche or whipped cream with strawberry pieces and/or other fruits.
