This is a light and very tasty salad recipe that also goes great during festive seasons or family lunches and celebrations.

Ingredients:

  • 1kg smoked chicken
  • 1 can of pineapple in syrup
  • 300g of chopped (or diced) ham
  • 300g of raisins
  • 4 green apples
  • 1 (or more) lemons to marinate apples and prevent them from turning brown
  • 1 can of corn
  • 250ml heavy cream
  • 1 small pot of mayonnaise

Directions:

  1. Shred the chicken into small pieces.
  2. Drain the juice (syrup) of the pineapple and cut it into small pieces.
  3. Also drain the liquid of the corn. 
  4. Peel the apples and cut into small pieces. Then, let them in a bowl with lemon juice so they do not darken.
  5. Mix the heavy cream with mayonnaise.
  6. In a big bowl, add the shredded chicken, chopped pineapple, corn, raisins and apples. Mix them lightly, add the mixture of heavy cream and mayonnaise and mix a little more.
  7. Refrigerate until serving time.

Total Time / Yield:

  • About 30 minutes to 1 hour / 6-8 servings
