Wine And Mushroom Chicken

This is a recipe for chicken stew made in the microwave that is perfect for those days when we want to prepare a good meal that doesn’t take too long to prepare.

Ingredients:

  • 100g of diced bacon
  • 2 carrots, diced
  • 2 cups of sliced ​​mushrooms
  • 1kg of chicken pieces
  • Salt and pepper to taste
  • 1 onion, chopped
  • ½ cup of tomato paste
  • 1 cup of red wine
  • 1 teaspoon of thyme
  • 3 tablespoons of butter

Directions:

  1. Place the bacon in an ovenproof dish, cover with paper towel and microwave on high power for 4 minutes, but stir twice during this time.
  2. After this time, remove from microwave. Remove the excess fat from the ovenproof dish, add the carrot and mushrooms, cover and return to microwave on high for 3 minutes, but stir once in half the time.
  3. Season chicken with salt and spread the pieces over the other ingredients that are in the ovenproof dish. Add onion, tomato paste, wine, thyme and return to microwave on high power for 15 to 20 minutes, but move the chicken pieces around the dish in half the time.
  4. Transfer only the chicken pieces to a plate. Cover and set aside.
  5. Add the pepper and butter to the rest of the ingredients remaining in the ovenproof dish. Mix well.
  6. Use the remaining mixture of ovenproof dish to spread over the chicken and serve.

  • About 30 minutes / 4 servings
