This is a simple sauce recipe that can be used on all types of pasta.

Ingredients:

  • 8 ripe tomatoes, peeled, seeded and diced
  • 5 cloves of garlic, sliced or minced
  • 1 chopped onion
  • 3 tbsp olive oil
  • Salt and pepper to taste
  • 1 teaspoon of brown sugar
  • 1 to 2 tbsp Italian dry seasoning or dried basil

Directions:

  1. In a skillet, heat a little the olive oil, add the garlic and onion. Saute until golden.
  2. Add tomatoes, Italian dry seasoning (or dried basil), salt, pepper, sugar and stir for about 1 minute. Let it cook on low heat for about 3-5 minutes.
  3. Then, serve on top your favorite pasta.

Total Time / Yield:

  • About 25-30 minutes / 3-4 servings

Notes, Tips & Tricks:

  1. When cooking tomato sauce, be sure to cover it with a lid, as it can splatter and mess while boiling.
  2. If desired, use 1 can of diced tomato instead of fresh tomato. In this case, add a bit more of the spices and other ingredients listed above to season the sauce because one 28-ounce can of tomatoes equals about 10 to 12 whole tomatoes.
