Cassava Cake – Manioc Cake

Cassava cake has a very soft texture and is incredibly tasty.

Ingredients:

  • 1 ½ cup sugar
  • ½ cup butter
  • 3 eggs
  • 2 cups raw cassava, peeled and grated (about 600g)
  • 1 cup of coconut milk
  • 2 teaspoons baking powder
  • ½ cup all-purpose flour
  • Butter or margarine to grease a cake pan

Directions:

  1. Preheat oven to 350° F (about 180°C).
  2. Using an electric beater, beat well the egg whites until stiff and set aside.
  3. Then, with the electric beater and in another bowl, mix the sugar and butter until very soft and creamy.
  4. Add the beaten egg yolks and continue to beat until the batter is very light.
  5. Add alternately, cassava, coconut milk and baking powder already mixed with the flour, beating constantly.
  6. Finally add the egg whites and mix gently.
  7. Grease a cake pan and add the mixture in.
  8. Take it to the oven for about 50 minutes or until piercing it with a toothpick, it will come out dry.

Total Time / Yield:

  • Around 1 hour and 30 minutes / 10-12 servings

  • Cassava is also known as manioc or yucca.
