Cassava Cake – Manioc Cake
Cassava cake has a very soft texture and is incredibly tasty.
Ingredients:
- 1 ½ cup sugar
- ½ cup butter
- 3 eggs
- 2 cups raw cassava, peeled and grated (about 600g)
- 1 cup of coconut milk
- 2 teaspoons baking powder
- ½ cup all-purpose flour
- Butter or margarine to grease a cake pan
Directions:
- Preheat oven to 350° F (about 180°C).
- Using an electric beater, beat well the egg whites until stiff and set aside.
- Then, with the electric beater and in another bowl, mix the sugar and butter until very soft and creamy.
- Add the beaten egg yolks and continue to beat until the batter is very light.
- Add alternately, cassava, coconut milk and baking powder already mixed with the flour, beating constantly.
- Finally add the egg whites and mix gently.
- Grease a cake pan and add the mixture in.
- Take it to the oven for about 50 minutes or until piercing it with a toothpick, it will come out dry.
Total Time / Yield:
- Around 1 hour and 30 minutes / 10-12 servings
