Coffee Marble Cake
This recipe is a different option to the marble cake using coffee instead of chocolate.
Ingredients:
- 3 eggs (whites and yolks separated)
- 1 and ¼ cup sugar
- ½ cup butter
- 2 cups all-purpose flour, sifted
- 1 cup plain yogurt
- 1 pinch of salt
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- ¼ cup of instant coffee
- Butter to grease and all-purpose flour for dusting the cake pan
Directions:
- Preheat oven to medium heat (about 400°F / 200 ° C).
- Grease with butter and dust with flour a cake pan.
- Using an electric beater, beat well the egg whites until stiff. Set aside.
- In another bowl, beat the egg yolks and sugar.
- Add the butter, flour, yogurt and beat more until mixture is smooth.
- Add the egg whites beaten previously, salt, vanilla and baking powder. Mix well.
- Remove 1 cup of the mixture and mix with the coffee.
- Pour half of the clearest mixture in the cake pan. On top, spread spoonfuls of the mixture with coffee. Cover with the remainder of the clearest mixture. Then, with the handle of a spoon (or using a small fork), make gentle movements from the bottom up to mix the two colors of batter to get the marble effect.
- Bake for about 40 minutes.
- Let cool a little bit and then unmold.
