Creamy Beef Stew
This recipe is great for those days when you want to make something that doesn’t take a lot of time to prepare.
Ingredients:
- 1/2kg beef (any inexpensive meat) cut into strips or diced (seasoned with salt and pepper to taste)
- 2 tablespoons olive oil
- 1 onion, chopped
- 1 garlic clove, minced
- ½ cup water
- 4 chopped tomatoes, peeled and seeded
- 1 tablespoon ketchup
- 250ml of heavy cream
- 1 tablespoon chopped parsley
- Salt and pepper to taste
- Optional: 1 green bell pepper
- Optional: garnish with scallions or parsley
Directions:
- In a large saucepan add the olive oil, then fry the onion and garlic. (If you are going to add the green pepper, do so here, in this step.)
- Add the meat, salt, black pepper and fry until golden brown.
- Add tomatoes, water and stir. Cook until the liquid reduce.
- Add the ketchup, heavy cream and parsley. Stir and cook for about 2 minutes.
- Optional: garnish with scallions or parsley
- Serve hot with white rice.
