Gelatin Mosaic
This dessert looks very beautiful and sophisticated, as well as having a very pleasant flavor.
Ingredients:
- 4 boxes of gelatin powder with different flavors and colors
- 2 envelopes unflavored gelatin powder
- ½ cup cold water
- ½ cup hot water
- 1 can of sweetened condensed milk
- 200ml of coconut milk
Directions:
- Prepare each gelatin box separately according to package directions and place each in separate containers. Refrigerate for 2 to 3 hours or until hardened.
- Once hardened, gently cut each gelatin into cubes and set aside.
- Mix the unflavored gelatin with cold water and add the hot water.
- In a blender, add the mixture with unflavored gelatin, the sweetened condensed milk and the coconut milk. Mix well.
- In a large bowl, pour the mixture from the blender and gently add all the gelatin cubes. Mix it gently to avoid breaking the cubes. Moisten the inside of a cake pan (with a hole in the middle) and gently pour the entire mixture inside it.
- Refrigerate for 2 to 3 hours or until getting hardened.
- After hardening, unmold and serve.

- About 6 hours / 10 to 12 servings
Notes, Tips & Tricks:
- Another way of mixing the gelatin cubes with the mixture from the blender, is by placing layers of colored gelatin cubes in the cake pan and alternating with the mixture from the blender. Repeat these steps until finished.
- Before placing in the refrigerator, shake the cake pan a little so that the mixture penetrates all the spaces between the gelatin cubes.
