Greek Style Rice
This rice is pleasing to the eye because it is very colorful, and is a great side dish.
Ingredients:
- 1 cup of rice
- 2 cups boiling water
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1 teaspoon vegetable oil or olive oil
- 2 tablespoons of butter
- 1/2 cup of chopped ham
- 1/2 cup of cooked peas
- 1/2 cup of grated raw carrot (or cooked and diced)
- 1/2 cup chopped onion
- 2 tablespoons green onions (scallion), chopped
- 1 small tomato, seeded and chopped
- 1/2 cup raisins
- Grated Parmesan cheese to taste
- Salt to taste
Directions:
- In a saucepan, lightly saute rice in vegetable oil or olive oil. Add garlic powder, onion powder, salt to taste and boiling water. Stir and let boil. Lower the heat, cover (but leaving a small gap) and cook until the water dry on the bottom of the pan. (Check it by sticking a fork until the bottom of the pan and pushing a little rice to see if the bottom is dry.) Set aside.
- In another pan, add the butter to melt. Add the chopped onion and saute a bit. Add the ham and stir a bit.
- Add the cooked rice and stir.
- Add the other ingredients (except the grated cheese) and stir again to saute a little and warm up the rest of the ingredients.
- Finally, sprinkle the grated cheese on top.
