Greek Style Rice

This rice is pleasing to the eye because it is very colorful, and is a great side dish.

Ingredients:

  • 1 cup of rice
  • 2 cups boiling water
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 teaspoon vegetable oil or olive oil
  • 2 tablespoons of butter
  • 1/2 cup of chopped ham
  • 1/2 cup of cooked peas
  • 1/2 cup of grated raw carrot (or cooked and diced)
  • 1/2 cup chopped onion
  • 2 tablespoons green onions (scallion), chopped
  • 1 small tomato, seeded and chopped
  • 1/2 cup raisins
  • Grated Parmesan cheese to taste
  • Salt to taste

Directions:

  1. In a saucepan, lightly saute rice in vegetable oil or olive oil. Add garlic powder, onion powder, salt to taste and boiling water. Stir and let boil. Lower the heat, cover (but leaving a small gap) and cook until the water dry on the bottom of the pan. (Check it by sticking a fork until the bottom of the pan and pushing a little rice to see if the bottom is dry.) Set aside.
  2. In another pan, add the butter to melt. Add the chopped onion and saute a bit. Add the ham and stir a bit.
  3. Add the cooked rice and stir.
  4. Add the other ingredients (except the grated cheese) and stir again to saute a little and warm up the rest of the ingredients.
  5. Finally, sprinkle the grated cheese on top.
