Muffins With Gelatin
This is a really cool recipe because it can be made in different colors, depending on the flavor of gelatin you use.
Ingredients:
- 3 large eggs (yolks and whites separated)
- 3 tablespoons of butter
- 1 cup sugar
- 3 cups all-purpose flour
- 1 tablespoon baking powder
- 1 cup milk
- 1 box of gelatin powder – flavor of your choice (this recipe was made with strawberry flavored gelatin)
Directions:
- Preheat oven to a temperature of 180° C (350° F).
- Prepare the muffins baking trays by placing a paper baking cup within each space.
- In a bowl, add the egg yolks, butter and sugar. Beat with electric mixer until smooth.
- Add the milk and the flour. Beat well until the mixture is creamy.
- In another bowl, using an electric mixer, beat the egg whites and then add the gelatin powder. Beat again to mix everything.
- Join to the batter previously made. Mix it gently using a spatula, moving from the bottom up (by folding), until the mixtures are fully incorporated.
- Add a little of the batter into each paper baking cup.
- Place the trays in the oven and bake for 18 to 20 minutes or until sticking a toothpick, it comes out clean and dry. Be careful not to over bake, so that the muffins are not hard and dark on top (the top should be just the color of the gelatin used).
Total Time / Yield:
- 30-35 minutes / 16-18 muffins
Notes, Tips & Tricks:
- If you prefer, use all the batter to make a single cake by adding it into a cake pan, previously greased with butter and floured with flour, then place the cake pan in the oven and bake for about 35 minutes or until sticking a toothpick, it comes out clean and dry.
- You can turn your muffins into cupcakes by spreading a little chocolate frosting or whipped cream on top and garnish with some pieces of fruit that are related to the gelatin flavor you used (if using lemon flavor, place some lemon zest on top for garnishing). Also add some sprinkles.
