Roasted Chickpeas – A Healthy Snack

A healthy and nutritious snack.

Ingredients:

  • 2 cans of chickpeas
  • 1 tablespoon cumin powder
  • 1 tablespoon paprika
  • Zest of 1 lemon
  • 3 tablespoons of olive oil
  • Salt and freshly ground pepper to taste

Directions:

  1. Preheat oven to 200°C (about 400°F).
  2. Discard the liquid from the cans, wash the chickpeas under running water and drain the water using a colander. Transfer to a bowl.
  3. Add the olive oil, cumin, paprika, salt and freshly ground black pepper. Mix the seasonings well until the chickpeas are coated.
  4. Transfer the chickpeas to a nonstick baking sheet. Place in the oven and bake for about 40 minutes. Remove from the oven, stir in the lemon zest and serve immediately.
