Special Lemon Bread

A different sweet bread that goes great for breakfast or lunch/snack.

Ingredients for the bread:

  • 1 cup butter, softened
  • 1 cup sugar
  • 3 eggs, with yolks and whites separated
  • Zest of 1 lemon
  • 3 cups all-purpose flour
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • 1 cup milk
  • 2 apples peeled and chopped
  • 1 cup chopped pineapple

Ingredients for the topping:

  • 2 tablespoons butter, softened
  • 1 ¼ cups icing sugar
  • 3 tablespoons lemon juice
  • 1 ½ teaspoon lemon zest

Directions:

  1. Preheat oven to 350°F (180°C).
  2. Grease and flour two 8”X4” (1.5 L) loaf pans.
  3. Cream butter and sugar until light and fluffy.
  4. Beat in egg yolks and lemon zest.
  5. Stir together flour, baking powder and salt. Add to butter mixture alternately with milk.
  6. Beat egg whites until stiff.
  7. Fold into bread mixture along with apples and pineapple.
  8. Pour into two loaf pans.
  9. Bake for 1 hour or more if necessary.
  10. Combine topping ingredients and drizzle over the two cakes.

Total Time / Yield:

  • About 1 hour and 30 minutes / 2 loaves of bread

Notes, Tips & Tricks:

  • This recipe can also be made by replacing the apples and pineapple with 1 cup of chopped walnuts, pecans or hazelnuts.
