Stuffed Baked Potatoes
Stuffed potatoes are always a good option to vary your menu, as well as being very tasty.
Ingredients:
- 4 large potatoes
- 2 tablespoons olive oil (or vegetable oil)
- 1 small onion, chopped
- 400g of ground beef
- Salt and pepper to taste
- ½ cup of tomato sauce or pasta sauce
- 3/4 cup heavy cream
- 1 cup grated mozzarella cheese or in slices
- Optional: 4 tablespoons of shoestring potatoes
- Optional: 1 tablespoon chopped parsley
- Butter, vegetable oil or olive oil for greasing baking sheet
Directions:
- Preheat oven to 400°F (200°C).
- Wash the potatoes with the skins.
- In a pot with boiling water and salt, cook the potatoes, but don’t let them getting too soft. Set aside.
- In a saucepan, heat the olive oil (or vegetable oil) , fry the onion and saute ground beef until getting almost dry (without liquid). Season with salt and pepper to taste.
- Add the tomato sauce (or pasta sauce) and cook for another 5 minutes. Turn off the heat, add the heavy cream and mix.
- Cut each potato in the middle, in the length direction, but let about 2cm to keep both sides still attached.
- Fill each potato with the mixture from the pan and sprinkle with grated mozzarella (or in slices). Place them on a baking sheet greased with butter (or oil) and bake (gratin) for about 10 minutes.
- Add 1 tablespoon of shoestring potatoes and parsley on top of each potato. Serve while still hot.
