Sweet Bread

This is a different bread, slightly sweet and can be served in different ways.

Ingredients:

  • 2 tablespoons sugar
  • 30g fresh yeast or 1 package (8g) active dry yeast
  • 250ml of warm milk
  • 2 teaspoons of salt
  • 4 eggs (yolks and whites separated)
  • 1 cup oil (or ½ cup butter or margarine plus ½ cup oil)
  • 1 cup sugar
  • 1 box of raisins (about 40 to 50g)
  • 600g all-purpose flour (or 4 cups plus 6 tablespoons)
  • Butter or margarine for greasing cake pan
  • All-purpose flour for dusting cake pan

Directions:

  1. Preheat the oven at 400° F (about 200°C).
  2. Mix sugar (2 tablespoons), yeast and warm milk. Cover the mixture and let it rest for about 10 minutes or until the yeast is well activated.
  3. With an electric mixer, beat the egg whites.
  4. Then add the egg yolks, sugar (1 cup), oil and salt. Beat well.
  5. Add the mixture previously made with sugar, yeast and milk. Mix everything up.
  6. Add the flour gradually and mix everything with an electric mixer or wooden spoon until “open” bubbles, about 5 minutes. Add the raisins and mix again.
  7. Grease a baking pan with butter or margarine and dust with flour. Add the batter. The batter gets a little soft. Let in a closed place for about two hours.
  8. Place in the oven and bake until golden brown.

Total Time / Yield:

  • About 1 hour plus the 2 hours that batter rests / 24 servings

  • The result of the recipe will look like a cake, but it is a bread!
