Tapioca Cake

This cake has a very soft texture and is very tasty.

Ingredients:

  • 1 cup tapioca
  • 1 1/2 cup coconut milk
  • 250g butter
  • 1 1/2 cup sugar
  • 3 eggs
  • 100g grated dry coconut
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 pinch of salt
  • Butter to grease and all-purpose flour for dusting the cake pan
  • Optional: Dulce de Leche to spread over the cake

Directions:

  1. Preheat oven to 400 °F (about 200 °C).
  2. Grease with butter and dust with flour a cake pan.
  3. Using an electric beater, beat the butter and sugar for about two minutes.
  4. Then add the eggs and beat until the mixture is light and whitish (beat well to avoid the smell of egg in the batter).
  5. Add the tapioca, coconut milk, grated coconut, all-purpose flour, baking powder and salt. Beat well.
  6. Add batter into a cake pan and bake for about 40 minutes or when to stick a toothpick, it comes out clean.
  7. Let the cake cool for about 15 to 20 minutes and then unmold.
  8. If desired, spread Dulce de Leche over the cake
