Spicy Mango Salad
This combination of mango and pepper gives this salad a very special flavor.
Ingredients:
- 2 large ripe (but very firm) mangoes, peeled and cut into thin strips
- 1 to 2 red chilies, without seeds and finely chopped
- 1/2 tsp sea salt, or to taste
- 1 tbsp granulated white sugar
- 4 tbsp freshly squeezed lime juice (about 1 to 1-1/2 lime)
Directions:
- In a large bowl, add the lime juice, salt and sugar. Mix well.
- Add the mangoes and chilies. Toss well all the ingredients.
- Before serving, set aside for 10 minutes to let the flavors get into the mango strips.

Notes, Tips & Tricks:
- The amount of sugar and lime juice to use will depend on how green and/or sour the mangoes are. The quantities suggested above are for two large, firm mangoes that have just started to turn yellow.
