Roasted Chickpeas – A Healthy Snack
A healthy and nutritious snack.
Ingredients:
- 2 cans of chickpeas
- 1 tablespoon cumin powder
- 1 tablespoon paprika
- Zest of 1 lemon
- 3 tablespoons of olive oil
- Salt and freshly ground pepper to taste
Directions:
- Preheat oven to 200°C (about 400°F).
- Discard the liquid from the cans, wash the chickpeas under running water and drain the water using a colander. Transfer to a bowl.
- Add the olive oil, cumin, paprika, salt and freshly ground black pepper. Mix the seasonings well until the chickpeas are coated.
- Transfer the chickpeas to a nonstick baking sheet. Place in the oven and bake for about 40 minutes. Remove from the oven, stir in the lemon zest and serve immediately.
