Creamy Beef Stew

This recipe is great for those days when you want to make something that doesn’t take a lot of time to prepare.

Ingredients:

  • 1/2kg beef (any inexpensive meat) cut into strips or diced (seasoned with salt and pepper to taste)
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 1 garlic clove, minced
  • ½ cup water
  • 4 chopped tomatoes, peeled and seeded
  • 1 tablespoon ketchup
  • 250ml of heavy cream
  • 1 tablespoon chopped parsley
  • Salt and pepper to taste
  • Optional: 1 green bell pepper
  • Optional: garnish with scallions or parsley

Directions:

  1. In a large saucepan add the olive oil, then fry the onion and garlic. (If you are going to add the green pepper, do so here, in this step.)
  2. Add the meat, salt, black pepper and fry until golden brown.
  3. Add tomatoes, water and stir. Cook until the liquid reduce.
  4. Add the ketchup, heavy cream and parsley. Stir and cook for about 2 minutes.
  5. Optional: garnish with scallions or parsley
  6. Serve hot with white rice.

Total Time / Yield:

  • 15-20 minutes / 4 servings
