Tapioca Cake
This cake has a very soft texture and is very tasty.
Ingredients:
- 1 cup tapioca
- 1 1/2 cup coconut milk
- 250g butter
- 1 1/2 cup sugar
- 3 eggs
- 100g grated dry coconut
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1 pinch of salt
- Butter to grease and all-purpose flour for dusting the cake pan
- Optional: Dulce de Leche to spread over the cake
Directions:
- Preheat oven to 400 °F (about 200 °C).
- Grease with butter and dust with flour a cake pan.
- Using an electric beater, beat the butter and sugar for about two minutes.
- Then add the eggs and beat until the mixture is light and whitish (beat well to avoid the smell of egg in the batter).
- Add the tapioca, coconut milk, grated coconut, all-purpose flour, baking powder and salt. Beat well.
- Add batter into a cake pan and bake for about 40 minutes or when to stick a toothpick, it comes out clean.
- Let the cake cool for about 15 to 20 minutes and then unmold.
- If desired, spread Dulce de Leche over the cake
