Special Lemon Bread
A different sweet bread that goes great for breakfast or lunch/snack.
Ingredients for the bread:
- 1 cup butter, softened
- 1 cup sugar
- 3 eggs, with yolks and whites separated
- Zest of 1 lemon
- 3 cups all-purpose flour
- 2 teaspoons baking powder
- ¼ teaspoon salt
- 1 cup milk
- 2 apples peeled and chopped
- 1 cup chopped pineapple
Ingredients for the topping:
- 2 tablespoons butter, softened
- 1 ¼ cups icing sugar
- 3 tablespoons lemon juice
- 1 ½ teaspoon lemon zest
Directions:
- Preheat oven to 350°F (180°C).
- Grease and flour two 8”X4” (1.5 L) loaf pans.
- Cream butter and sugar until light and fluffy.
- Beat in egg yolks and lemon zest.
- Stir together flour, baking powder and salt. Add to butter mixture alternately with milk.
- Beat egg whites until stiff.
- Fold into bread mixture along with apples and pineapple.
- Pour into two loaf pans.
- Bake for 1 hour or more if necessary.
- Combine topping ingredients and drizzle over the two cakes.
Total Time / Yield:
- About 1 hour and 30 minutes / 2 loaves of bread
Notes, Tips & Tricks:
- This recipe can also be made by replacing the apples and pineapple with 1 cup of chopped walnuts, pecans or hazelnuts.
